As mentioned earlier, the entire Half-Life series has an awesome soundtrack. During the quieter story development scenes, there's often very subtle ambiance music being played to create emotional depth. During the more intense combat sequences, heart pumping techno tracks start creating an intense, balls-to-the-wall combat feel that makes the whole gaming experience feel very cinematic.

Seconded. I had finished HL2 twice without ever really realizing I was listening to ambient soundtracks most of the time... it was only after I used GCFScape to rummage through the game files that I realized how densely designed the soundscape of the game was. I was very impressed.

The LucasArts adventures had fantastic soundtracks, highlights being the calypso-infused Monkey Island ones.

And I'd like to honorably mention the songs you hear on the radio in the GTA games. They're just licensed songs and basically a glorified mp3 playlist, but somehow they still add to the gameplay and to the athmosphere of the game... to me, at least.

The first time I remember being blown away by a games sound track was Total Annihilation... it had a very Gustav Holst/John Williams sound to it.

Mafia had a great soundtrack.

The soundtrack to the game features Django Reinhardt and the Hot Club de France, The Mills Brothers, Louis Armstrong, Louis Prima, Duke Ellington, Lonnie Johnson, and one track by Louis Jordan and his Tympany Five. The main theme to Mafia, along with the original score, was composed by Vladimir Šimůnek, and performed by the Bohemia Symphonic Orchestra conducted by Adam Klemens. The ending credits music is a cover of the song Lake of Fire, performed by the Lordz of Brooklyn. Ironically, the last verse of the song borrows the musical arrangement of the theme song for the Godfather movies.

Michael Giacchino's work on the first couple Medal of Honor games, as previously mentioned, was totally awesome. So was Harry Gregson William's work on Metal Gear Solid 2 and 3. I actually have CDs to those.

Jesper Kyd also did an awesome job with both the Hitman games and Freedom Fighters.

Final Fantasy X and XII were great too.

There is only one song in Dwarf Fortress, but it is the only sound track I did not immediately turn off, so I guess it must be my favorite.

I have two in particular to mention, both by the same man.

First off, nothing says "The goddamn Russians are coming" like Hell March 2.

Secondly, the recent game Universe at War, while unspectacular itself, as some of the most amazing music ever, particularly Divine Intervention.

Frank Klepacki is a genius, but I wish I could find the theme music from Ground Control 2 that isn't attached to an obnoxious video of an unrelated game.

Medieval II Total War's soundtrack is pretty awesome, especially that of the Britannia campaign from the Kingdoms expansion.

I really enjoyed Jazz Jackrabbit 1 and 2's music (and Jazz Jackrabbit 3's music although that was just an alpha ;D)

Also, Quake Series sans Quake 4 (Sonic Mayhem and trent Reznor. What's NOT to like?)

There's also the whole of the Unreal series minus Unreal 2, because the music was not as engaging. Gears of War's soundtrack is also really well done and I consider it an orchestral piece.

There's also Lumines, Nexuiz (free game), Portal, Roboblitz, TF2, and Uplink.

I'll probably get razzed for this, but I really like the soundtracks for GTA Vice City and San Andreas. Great use of popular music in video games and covers a wide variety of genres.

If anything, they make great mix cds.

Blue Dragon has some absolutely fantastic music in it.

Halo's chanty bit is amazing.

I'll second Bioshock, it really added to the atmosphere

I'm surprised Sonic The Hedgehog's Marble Zone music hasn't been mentioned.

That's a remix of the original which later became the official theme tune. It's called Techno Syndrome and it's by The Immortals.

Twisted Metal Black has a very cinematic and dark soundtrack by Kevin Manthei. You can listen to a few tracks at his website, and at some point I managed to download a bunch, but I don't remember where from. Possibly an older version of his site.

Pick a game from the Suikoden series and you'll find some one of the best sounds tracks to be had.  The music in Suikoden 2 holds a special place in my heart, but the intro to 3 is probably my favorite.

I've always liked the music in Megaman X games.  You can probably get them from Youtube if you know how to extract audio files.

Wind Waker and Okami also had great scores.
