The Metal Gear Solid series and Ocarina of Time soundtracks, as mentioned. Also, the Half-Life 2 soundtrack was mentioned, but I would like to add HL1.
Besides that, I absolutely love the Ace Combat 2 soundtrack (awesome rock music while downing MIGs) and the Medievil soundtrack (you can listen to it on the remake's official website). Both of those games are for the PSX (the ME remake being for the PSP).

Medal of Honor: Allied Assault.

Man, a beautiful and dramatic classical score that added a great edge to the game. I expected Ride of The Valkyries to start at any time.

I'm disappointed. What happened to the good days of long stories? Where's the multiple personalities and car chases?

I've always liked the rock music played during the Dynasty Warriors games.

Now this is a thread I can get behind.

As mentioned earlier, the entire Half-Life series has an awesome soundtrack. During the quieter story development scenes, there's often very subtle ambiance music being played to create emotional depth. During the more intense combat sequences, heart pumping techno tracks start creating an intense, balls-to-the-wall combat feel that makes the whole gaming experience feel very cinematic.

Other favorites include the Supreme Commandersoundtrack. There's the one main theme that's just so militant and grand, it really makes all out robot warfare feel good. Then there's the soundtrack for Warcraft III, which was exactly what the soundtrack to fantasy themed fiction should sound like. Dramatic, orchestral and grand.

There's a lot more, but I don't want to hog the thread. Needless to say, storylines and quality of music are two of my primo deciding factors in how much I like game, both right behind how fun it is to play it.

Michael Land wrote fantastic music for the Secret of Monkey Island 1 and 2 (and maybe the later ones too-- haven't played them).

(Mostly) Koji Kondo's stuff for the Legend of Zelda series, but Wind Waker takes the absolute title. Ocarina of Time's made me realize the impact that good soundtracks could have on good games and help them become great.

I really like the Silent Hill series' music by Akira Yamaoka.

Particularly Silent Hill 4: The Room.

Mass Effect

The entire game's soundtrack is a delicious throwback to sci-fi techno from the late 70's/early 80's.

The original Halo soundtrack was pretty good. I hear that initial choir hum, and I still get a chill down my back. Also, I've always been a huge fan of Breaking Benjamin, and I love the fact that they managed another plug of their music in a video game (Halo 2, in case you didn't know). Their first game music is one of the reasons I even found out about this awesome band, the sweet video from RLH. Heh, I'm still a little peeved they haven't made RLH II yet, but that's another topic for another thread...

Anything written by Michael Giacchino or Chris Tilton, i.e. the first few entries in the Medal of Honor series, Mercenaries, Secret Weapons Over Normandy, Black.

Better than most movie scores.

Hitman: Silent Assassin has an excellent score, performed by the Budapest Symphony Orchestra. It's incredibly cinematic and contributes greatly to the overall experience.

Call of Duty 3 scored by Joel Goldsmith, the son of Jerry Goldsmith.  My favorite track is "Nightdrop," which has a wonderfully British WWII flick feel to it.

That track sounds like the genetically-engineered love child of the themes from The Bridge on the River Kwai, JAG, and Band Aid's Do They Know It's Christmas?.

Crisis Core: Final Fantasy VII

Having just beaten it, I have to say I'm most pleased with the soundtrack. I'm NOT, however, pleased with the musical direction in the game. There were a few instances where the music did not fit the action whatsoever, but I suppose that's more of an opinion of perspective.

Takeharu Ishimoto really knows how to rock your socks off with some good rock styles.

This reminds me of the Devil May Cry series soundtracks. If you like Metal and Techno, it's all right up your alley.

Arc the Lad: Twilight of the Spirits.

Especially some of the fight music, I used to just leave the game on to listen to it. I haven't been able to find any of the music outside of the game itself, and of course I lost the game a couple of months ago.

And I haven't played the games, but I've been in the room while other people have played them so I think that gives me enough knowledge to put up another vote for the Silent Hill series.

My favorite is without a doubt the music from  this intro.

There are loads of games with better music, graphics and story but Final Fantasy VIII holds a special place for me. After years of playing every game out there for my the Nintendo consoles (I was never much of a computer gamer because my family had a mac), I went to a friends house. This game had real orchestral music. For fucks sake, it had what sounded like a 120 piece choir! The characters in the cut scene didn't look as if they were made of Lego bricks!

That very same day I went out, bought sold my Nintendo 64 with all my games (which I later regretted for Ocarina of Time and Goldeneye) and bought the Playstation 1 and Final Fantasy VIII. I practically didn't do anything but play it for about a week. I still bring it out and run through it again once in a while (every two years or so, I get the urge).

It was the music that got me though.

What was the name of the Castlevania game for Nintendo 64? The one with the creepy woman that would water her roses with blood, and had a vampire playing the violin on the main screen? That one had pretty awesome music too. That tango-ish thing for solo violin was pretty cool.

And all the Mega Man series for the original Nintendo, specially Mega Man 2 and Mega Man 5 had really catchy awesome music.

This

Say what you will about Chrono Cross, but it has incredible music. The opening song is the only game music I've downloaded for listening outside the game. The rest of the soundtrack is damn good, too.
